1 1/2 c. milk
1/3 c. butter
1 1/2 c. quick oats, uncooked
1/3 c. unsifted flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
1/4 tsp. cinnamon
2 eggs, separated
2 ripe bananas, diced
Heat milk and butter until butter melts. Remove fromheat, stir in oatmeal. Cool. Stir together flour, baking powder,
salt, and cinnamon. Add egg yolks to mixture, stir just until blended. Beat egg whites until stiff;
fold with bananas into mixture. Makes about 16 pancakes.
