Cider Roast Pork and 2 Bean Potatoes and Onions


Cider Roast Pork with 2 Bean Potatoes and Onions:



Ingredients:

  • 1 large onion, roughly chopped
  • 3 cloves garlic
  • 2 cups apple cider
  • 1 1/2 cups water
  • salt and pepper to taste
  • 1/2 teaspoon ground ginger
  • 1 (3 pound) pork loin roast
  • 2 teaspoons vegetable oil
  • 1 C Beef Broth
  • 2 C Green Beans
  • 4 Potatoes Cut in 1/4th pieces
  • I Can Kidney Beans

Directions:

  1. Combine 1/4 of the onion, and the garlic in the bowl of a food processor. Process until smooth. Transfer to slow cooker along with the apple cider, broth and water.
  2. Combine the salt, pepper, and ginger  in a shallow container. Gently press the roast onto this mixture to coat all sides.. Heat the oil in a large, heavy skillet. Brown the pork in the hot oil, turning until golden on all sides. Place the browned roast in the slow cooker and scatter the Green and Kidney Beans. and the remaining onion on top. Cook on low for 4 hours, then add potatoes. Cook for an additional 3 hours.
  3. Remove the cooked roast to a heated platter, arrange beans, onions and potatoes around roast and serve with the strained juices from the slow cooker.
